Quinoa and Chicken


Here is the recipe that I was looking at last night, to inspire my quinoa dish.
INGREDIENTS:
1 tablespoon extra-virgin olive oil
1 cup quinoa
2 cups chicken broth
2 tablespoons soy sauce
1 tablespoon minced fresh ginger root
1 clove garlic, minced
2 green onions, chopped
DIRECTIONS:
1.Heat olive oil in a saucepan over medium heat. Stir in quinoa and allow to toast for 2 to 3 minutes, then add chicken broth, soy sauce, ginger and garlic. Increase heat and bring to a boil. Cover and reduce heat to low. Simmer until all liquid has been absorbed, 25 to 30 minutes. Fluff quinoa with fork and top with green onions before serving.

So here is what I did.

I used a jar of my bottled chicken.
I heated the chicken in my skillet with 2 cloves of garlic and a big scoop of coconut oil.
Then I added 4 cups of cooked quinoa, 2 Tbsp of liquid aminos (soy sauce), and 2 tsp of chicken boullion seasoning. 

I'm glad you liked it!
I'm adding some broccoli to it today, for lunch. 

Bisquick pizza


INGREDIENTS

3cBisquick baking mix (or another brand, such as Baker's Choice)
3⁄4cwater

INSTRUCTIONS

Preheat oven to 425ºF. Generously coat pizza pan with vegetable oil spray or olive oil.
  1. In medium size bowl, use fork to mix together mix and water. When dough forms, knead lightly 15-20 times. Spread onto 11" by 16" baking stone or 15-16" pizza pan. (Oil hands lightly to make this task easier.) Top with sauce and cheese.
  2. Bake for 15-20 minutes, until pizza is golden and crispy at edges.
    *This can make either a thin-style crust or deep-dish style pizza, depending upon the size of your pan and how thinly you spread it.
