Slow Cooker Ham and Potato Soup
INGREDIENTS:
8 cups russet potatoes, diced
1 yellow onion, diced
2 large carrots, peeled and chopped
1/2 cup chopped celery
16 ounce Cubed Ham 2 packages of packages Smithfield Anytime Favorites™ Cubed Ham
1 teaspoon Kosher salt
1/4 teaspoon fresh cracked black pepper
1/4 cup flour
4 cups chicken broth
1 1/2 cups heavy cream (you can also use milk – I used whole milk)
½ cup sour cream
INSTRUCTIONS:
1 ) Add the potatoes, onion, carrot, celery, ham, Kosher salt, pepper chicken broth to your slow cooker and cook on low 7-8 hours, or high 4-5 hours.
2 ) Using a potato masher, mash about 1/3 of the potatoes (don’t worry the ham won’t really mash that much)
3 ) Add the flour, heavy cream/milk and sour cream and stir everything together.
Cover and cook on high for an additional 15 minutes.

Loaded Taco-Stuffed Cheesy Pockets
Ingredients:
1 packet Taco Seasoning
1 pound ground beef
½ cup salsa
8 ounces cream cheese, softened
2 tbsp melted butter
1 cup Cheddar Cheese, shredded
12 6 inch tortillas
Directions:
Preheat the oven to 350°F (175°C).
Crumble the ground beef into a skillet and cook thoroughly over medium heat.
Drain the grease from the skillet and add in the packet of Taco seasoning mix, following the directions on the package.
In a medium sized bowl, beat the cream cheese until it is smooth.
Add in the cup of salsa and blend well.
While holding a tortilla, place a spoonful of cheese mix in the center of the tortilla.
Place a spoonful of taco flavored beef, to cover the salsa and cheese mix.
Sprinkle with shredded cheese.
Fold the tortilla and filling as you would with a burrito.
Lightly spray a baking tray with non-stick spray.
Place rolled tortilla onto greased tray.
Brush the tops of the tortilla rolls with melted butter.
Bake for 15 minutes.
Remove from oven and add your choice of toppings, such as lettuce, salsa, sour cream, olives, more cheese.

INGREDIENTS:
3 mashed bananas (ripe)
1/3 cup apple sauce
2 cups oats
1/4 cup almond milk
1/4 cup raisins or nuts
1 cup good dark chocolate chunks (Lily’s brand is my fave)
1 tsp vanilla
1 tsp cinnamon
Instructions :
Preheat oven to 350 degrees.
Preheat the Oven: Set your oven to preheat at 350°F (177°C).
Prepare the Wet Ingredients: In a large mixing bowl, combine the mashed bananas and apple sauce. Stir them together until they are well mixed.
Add Flavorings: To the banana and apple sauce mixture, add the vanilla extract and cinnamon. Mix these in thoroughly to distribute the flavors evenly.
Incorporate the Oats: Add the oats to the bowl. Stir them into the mixture until they are fully incorporated.
Mix in Milk and Add-Ins: Pour the almond milk into the mixture to help moisten the oats. Then, add your choice of raisins, nuts, and dark chocolate chunks. Stir the mixture well to ensure that the add-ins are evenly distributed throughout.
Prepare the Baking Sheet: Line a baking sheet with parchment paper or lightly grease it to prevent the cookies from sticking.
Form the Cookies: Spoon out portions of the cookie mixture onto the prepared baking sheet. You can use a spoon or a cookie scoop to make uniform cookies. Flatten the cookies slightly with the back of the spoon or your hand, as they will not spread much during baking.
Bake the Cookies: Place the baking sheet in the preheated oven and bake the cookies for 15-20 minutes, or until they are firm and lightly golden.
