This refreshing and revitalizing dish perfectly combines creamy, tangy tzatziki with succulent chicken, all atop a bed of crisp romaine lettuce, juicy grape tomatoes, and a medley of vibran

Ingredients:


Tzatziki Sauce:

Plain Greek Yogurt (1 cup plus 2 Tbsp)

Cucumber (½, grated)

Garlic Cloves (2 to 3, pressed)

Olive Oil (2 Tbsp)

Fresh Dill (2 Tbsp, chopped)

Salt and Pepper to taste

Salad:

Cooked Chicken (2 cups, chopped)

Romaine Lettuce (2 cups, chopped)

Grape Tomatoes (1 cup, halved)

Pepperoncini Peppers (½ cup, sliced)

Kalamata Olives (½ cup, sliced)

Red Onion (¼ cup, chopped)

Feta Cheese (½ cup, crumbled)


Directions:


Tzatziki Preparation: Mix Greek yogurt, cucumber, garlic, olive oil, and dill. Season with salt and pepper.

Salad Assembly: Toss romaine lettuce, tomatoes, pepperoncini, olives, and red onion in a large bowl.

Combine: Layer the chopped chicken over the salad base.

Dress: Generously top with tzatziki sauce.

Garnish: Finish with crumbled feta cheese.

Chicken Fajita Casserole


Fajita Chicken Casserole –

Ingredients

4 cups shredded cooked chicken (about 3 large breasts)

2 cups instant rice

1 (10.5-ounce) can cream of chicken soup

1 cup sour cream

1 cup frozen diced onion and bell pepper blend

1 (10-ounce) can diced tomatoes with chilies (like Ro*Tel), undrained

1 1/2 cups chicken broth

1 (1.12-ounce) packet fajita seasoning

1 (8-ounce) shredded Mexican blend cheese (about 2 cups)

Instructions

Lightly spray a 9×13″ casserole dish with nonstick cooking spray. In a large bowl, combine the chicken, uncooked rice, cream of chicken soup, sour cream, frozen onion and bell pepper, tomatoes with chilies, chicken broth, fajita seasoning, and about half of the cheese. Mix until well combined. Pour the mixture into the prepared dish and spread it evenly. Cover with tin foil and bake in the oven for 35 minutes at 350 degrees. Uncover, sprinkle the rest of the cheese on top and bake another 10 minutes

Keto Quick ice cream

 This is HEAVEN!

1 cup heavy cream whipped until firm

Fold in 1 tbsp cocoa

1 tbsp peanut butter (optional)

Stevia to taste.

Chill in fridge. You can eat it right then but it’s sooooo much better chilled.

Homemade Egg Roll In A Bowl

INGREDIENTS

 • 1 tsp minced ginger

 • 4 1⁄2 cup(s) packaged coleslaw mix (shredded cabbage and carrots)

 • 1⁄2 cup(s) shredded carrot(s)

 • 3 medium cooked scallion(s)

 • 3 Tbsp low sodium soy sauce

 • 1 1⁄2 tsp sesame oil

 • 1 pound(s) ground chicken breast (can sub ground pork, turkey, or turkey sausage


INSTRUCTIONS

 1 Brown your choice of meat in a medium non stick skillet until cooked all the way through and then add the ginger.

 2 Add soy sauce and sesame oil.

 3 Add full bag of coleslaw, stir till coated with sauce

 4 Add 1/2 cup of shredded carrots, stir till coated with sauce

 5 Add chopped scallions, mix thoroughly and cook on medium high heat until the cole slaw has reduced by half.

Homemade Ramen

4 cups chicken broth

2 tablespoons hoisin sauce

2 tablespoons soy sauce

1/2 Tbsp Sriracha

1 Tbsp sesame oil

1 Tbsp ginger, finally minced

3 cloves of garlic, finely minced

2 packages ramen, discard the flavor packets

2 large eggs

Optional garnish: 

1 tablespoon sesame seeds

1/4 cup green onions thinly sliced


Add the chicken broth, hoisin sauce, soy sauce, sriracha, sesame oil, ginger, and garlic to a large pot of medium heat. Bring to a simmer. Add in the noodles. Boil for 4 to 5 minutes. Serve in a bowl

Salmon Bites

 What you need:

1 lb salmon

2 tbsp butter

2-3 tbsp chili lime seasoning 


How to make it:

1. Remove the skin from your salmon & chop into bite sized pieces.

2. Melt your butter in a large bowl. Mix your salmon bites and seasoning in the bowl.

3. Air fry at 400F for 10 mins, shaking halfway. 

4. Take them out, serve with your sauce & enjoy!


For the sauce: 

Mix 1/4 cup mayo with 1 tbsp sriracha (adjust to preference) 


This healthy salmon recipe is so delicious and such a quick & easy keto / low carb lunch or dinner 👍
