Olive Garden Gnoochi Soup Copy Cat

1 Tbsp Oil
4 Tbsp Butter
1 Cup diced onion
1/2 Cup diced celery
2 minced cloves of garlic
1/4 Cup flour
1 quart half and half

Simmer to thicken

14 ounces chicken broth
1 Cup cooked diced chicken
1/2 tsp parsley
1/2 tsp thyme
1/4 tsp nutmeg
1 tsp salt
1 Cup shredded carrots
1 package gnoochi
1 cup spinach
