Chili Dog Casserole


Ingredients

  • 2 (15 ounce) cans chili with beans
  • 1 (16 ounce) package beef frankfurters
  • 10 (8 inch) flour tortillas
  • 1 (8 ounce) package Cheddar cheese, shredded

Directions

  1. Preheat oven to 425 degrees F (220 degrees C).
  2. Spread 1 can of chili and beans in the bottom of a 9x13 inch baking dish. Roll up franks inside tortillas and place in baking dish, seam side down, on top of chili and bean 'bed'. Top with remaining can of chili and beans, and sprinkle with cheese.
  3. Cover baking dish with aluminum foil, and bake at 425 degrees F (220 degrees C) for 30 minutes.

Chicken Noodle Soup Casserole


Chicken noodle soup reminds me of being sick. However, I love the flavors and this casserole was the perfect solution to my dilemma! It really hit the spot on a cold winter evening, and my kids gobbled it up!

Ingredients

  • 4 whole Boneless, Skinless Chicken Breasts
  • 12 ounces, weight Egg Noodles (I Prefer Angel Hair)
  • 1 whole Onion, Chopped
  • 2 cloves Garlic, Pressed
  • ½ cups Carrots, Chopped
  • ½ cups Celery, Chopped
  • ¼ cups Butter
  • 1 can Cream Of Mushroom Soup (10 Ounce Can)
  • 1 can Cream Of Chicken Soup (10 Ounce Can)
  • ½ cups Sour Cream
  • Salt And Pepper, to taste
  • 1 Tablespoon Dried Parsley
  • 1 package (1 Sleeve From A Standard, 16 Ounce Box) Ritz Crackers, Crushed

Preparation Instructions

In a large pot of boiling water drizzle some olive oil and 1 tablespoon of salt. Boil the chicken until done, about 20 minutes.
Cook the noodles in boiling water according to package instructions.
While the noodles are cooking, cut up the chicken into 1/2 inch pieces. Drain pasta and set aside. Finely chop onions, carrots and celery.
In a pot saute onion, pressed garlic, carrots, and celery in the butter. Cook until the onions appear translucent, add the mushroom soup, chicken soup, and sour cream. Mix well. Salt and pepper if needed.
Add the noodles, chicken, and parsley. Stir until fully coated. Transfer to a greased 9×13 pan.
Bake at 350F for 30 minutes or until bubbly.
Remove from oven and sprinkle with crackers and bake 5 – 10 more minutes.

Hummus

Preparation:
1 cans garbanzo beans
2 Tablespoons lemon juice
1 Tablespoons tahini paste
2 cloves garlic, chopped
4 to 5 Tablespoons reserved juice from the garbanzo beans
3 heaping tablespoons plain yogurt
½ teaspoon cumin
Salt to taste
cayenne pepper to taste

Mince the garlic. Drain the liquid from the garbanzo beans into a small bowl and keep the liquid handy for later in the process. Add the beans and the garlic into the bowl of your food processor. Process with the metal blade until well combined. Make sure you open the processor at least once to scrape down the sides of the bowl with a spatula. Add in the lemon juice, tahini, yogurt, cumin, and cayenne and continue to process. Add enough of the reserved juice (4 to 5 Tablespoons) to make the hummus smooth and consistency that you like. I like mine quite smooth. The yogurt really helps in this regard and gives it a silky texture that I never achieved without the yogurt.

Zucchini Lasagna

  • 2 whole Medium Sized Zucchini- Shredded (about 4 Cups)
  • 1 box Lasagna Noodles
  • 26 ounces, weight Spaghetti Sauce
  • 22 ounces, weight Cottage Cheese
  • 2 Tablespoons Dried Oregano
  • 1 Tablespoon Garlic Salt
  • 2 cups Shredded Mozzarella Cheese

Preparation Instructions

Preheat oven to 350 degrees.

In a 9×13 pan, pour 1/4 of spaghetti sauce and even out. Put a layer of uncooked lasagna noodles on top of sauce. Mix remaining spaghetti sauce, zucchini, and garlic salt in a large bowl. In a separate bowl, mix cottage cheese and oregano.

Layer 1/2 cottage cheese mix on top of noodles in pan, then layer 1/2 zucchini mix on top of that. Put down a layer of noodles. Repeat once more, ending with noodles on top. Cover with mozzarella cheese.

Bake on center rack for 45 minutes. Remove from oven and let pan rest for 15 minutes before serving. You may have to lay tin foil on top to keep the cheese from browning too soon.


Low Fat Chocolate Peanut Butter Fudge

  • 252 grams Chocolate Protein Powder
  • 48 grams Rolled Oats
  • 120 milliliters Zero Fat Milk
  • 20 grams Cornflakes
  • 20 grams Peanut Butter

Preparation Instructions

1. Pour all the ingredients together (except milk) in a big bowl.
2. Mix thoroughly.
3. Drizzle milk and mix well.
4. Get a small piece of cling wrap, drop a scoop of the mixture on it.
5. Turn the wrap tightly.
6. Refrigerate it for at least 45 minutes.

  • 1-½ Tablespoon McCormick Grill Mates® Garlic & Onion Medley Seasoning
  • ¼ cups Canola Oil
  • ⅛ cups Balsamic Vinegar
  • 2 teaspoons Black Pepper, Ground Fresh
  • Parmesan Cheese To Taste

Preparation Instructions

Note: If you can’t find baby zucchini, use normal sized ones that are quartered lengthwise.

Wash the zucchini under cold water and drain well.

Trim about 1/8″ from the stem of each squash.

Square each zucchini by removing a sliver from each side.

Combine the seasoning, oil, vinegar and pepper in a large zip-top bag.

Seal the bag and shake to combine the marinade ingredients.

Add the zucchini to the bag, seal, and set aside for one to two hours.

Prepare your grill for direct cooking at medium heat (about 350º).

Oil the cooking grate lightly with canola oil.

Remove each zucchini from the bag, shake off the excess marinade, and lay them on the grill at a 45º angle. Reserve the marinade left in the bag.

Grill each side until they are nicely browned, about 2-3 minutes.

Lightly brush the zucchini with a small amount of the marinade each time you turn them.

Remove the zucchini to a platter in a single layer and immediately shave the cheese over them to taste.

Serve and enjoy!
